Miso Potato Stacks

Ingredients

  • 2-3 medium russet potatoes, cut into ⅛ inch thick slices
  • ¼ cup unsalted butter, melted
  • 1.5 tbsp Shared Cultures Black Garlic Modern Miso
  • ¼ cup grated parmesan cheese, plus more for sprinkling
  • Neutral oil, for brushing muffin tin
  • Salt and pepper, to taste
  • Fresh herbs, for garnish

Method

  1. Preheat oven to 375 deg F.
  2. Cut potatoes and set aside.
  3. In a large bowl, add butter, miso, parmesan cheese, salt and pepper.
  4. Place potatoes in the bowl and toss to coat evenly.
  5. Stack the potato slices into each muffin tin all the way to the top. Potatoes will shrink as they cook.
  6. Cover with foil and place in oven.
  7. After ~30 minutes, remove foil and increase to 400 deg F.
  8. Bake for another 15 minutes or until potatoes are golden brown.
  9. Run a butter knife along edges of each stack to release them from the tin.
  10. Serve hot with a sprinkle of parmesan cheese and fresh herbs.
