Black Garlic Miso Pasta

Ingredients
- 8 oz spaghetti
- 1 tbsp extra virgin olive oil
- 2 tbsp unsalted butter, softened
- 2 cloves garlic, thinly sliced
- 2 small shallots, finely chopped
- 2 tbsp @sharedcultures Black Garlic Modern Miso
- ½ cup heavy cream
- ⅓ cup Parmesan cheese, finely grated (plus more for topping)
- Salt & pepper, to taste
- Handful of parsley, finely chopped
- Optional: 1 raw egg yolk, for topping
Method
- Cook the pasta:
Bring a large pot of salted water to a boil. Cook spaghetti until just under al dente. Reserve ½ cup of the pasta water, then drain and set pasta aside. - Sauté aromatics:
In a skillet over medium heat, add olive oil, garlic, and shallots. Sauté for about 30 seconds until fragrant and softened. - Build the sauce:
Stir in the miso and heavy cream. Mix until fully combined and creamy. - Combine with pasta:
Add in the drained pasta, reserved pasta water, and butter. Toss until the sauce coats the noodles evenly and thickens slightly. - Finish and season:
Turn off the heat. Stir in most of the Parmesan and chopped parsley. Taste and season with salt and pepper if needed. - Serve:
Plate into two portions. Top with more cheese, parsley, and a raw egg yolk (if using). Serve hot and enjoy!
