Miso Corn Cheese Toast

This is a fun, easy way to jazz up your meal. It comes together in under 10 minutes with just a handful of ingredients. Torching adds a smoky flavor, but if you don’t have a torch, just pop it under the broiler for a minute!

Ingredients

  • Toasted sourdough bread
  • 1 cup canned corn, drained
  • 1–2 tbsp mayonnaise
  • 1 tbsp @sharedcultures miso (Morel Mushroom Miso used here)
  • Shredded mozzarella cheese
  • Scallions, for garnish

Method

  1. In a bowl, mix together corn, mayo, and miso until well combined.
  2. Spoon the corn mixture onto toasted sourdough.
  3. Top with shredded mozzarella cheese.
  4. Use a kitchen torch to lightly char the top—or broil for about 1 minute until bubbly and golden.
  5. Garnish with chopped scallions and serve warm.
