Miso Glazed Sweet Potato

Ingredients
- 2 medium sweet potatoes
- 2 tbsp butter
- 1 tbsp Shared Cultures Kombu Garlic Miso
- 1 tbsp honey
- Squeeze of lime
- Scallions and sesame seeds, for garnish
Method
- Thoroughly clean and dry the sweet potatoes.
- Poke holes all over.
- Wrap in parchment paper and bake at 375° for 45-50 minutes.
- Remove and slice open sweet potatoes through the center.
- Mix together butter, miso, and honey.
- Spread evenly onto the sweet potatoes.
- Squeeze lime juice and add scallions and sesame seeds.
- Enjoy hot!
