Miso Glazed Sweet Potato

Ingredients

  • 2 medium sweet potatoes
  • 2 tbsp butter
  • 1 tbsp Shared Cultures Kombu Garlic Miso
  • 1 tbsp honey
  • Squeeze of lime
  • Scallions and sesame seeds, for garnish

Method

  1. Thoroughly clean and dry the sweet potatoes.
  2. Poke holes all over.
  3. Wrap in parchment paper and bake at 375° for 45-50 minutes.
  4. Remove and slice open sweet potatoes through the center.
  5. Mix together butter, miso, and honey.
  6. Spread evenly onto the sweet potatoes.
  7. Squeeze lime juice and add scallions and sesame seeds.
  8. Enjoy hot!
