These sweet and savory miso-maple glazed carrots are as easy as they are delicious. The white-style miso adds a subtle umami richness that complements the natural sweetness of the maple syrup. Just glaze, roast, and serve—perfect for any holiday table.

Ingredients
- 1 lb carrots, trimmed and cleaned
- 1 tbsp butter, melted
- 2 tbsp white or yellow style miso (like @sharedcultures honeynut squash miso or the mirepoix )
- 1 tbsp maple syrup
- Salt & pepper, to taste
- Fresh parsley (for garnish, optional)
Method
- Preheat oven to 425°F (220°C).
- Slice larger carrots in half lengthwise for even cooking.
- In a bowl, whisk together melted butter, miso, maple syrup, salt, and pepper.
- Place carrots in a baking dish and spread the glaze evenly over them.
- Roast for 20–25 minutes, flip, then roast for an additional 10 minutes or until golden and tender.
- Serve: Transfer to a serving dish, garnish with parsley if desired, and enjoy warm.
