Featuring Shared Cultures Butter Bean Miso

Serves: 2 | Elegant, sweet-savory, and incredibly simple to make

Ingredients
  • 2 black cod fillets (about 7 oz each)

Marinade

To Serve

  • Steamed rice
  • Sautéed or steamed greens
  • Chopped scallions
Method:
  1. Prepare the marinade:
    In a bowl, whisk together miso, mirin, sake, and sugar until smooth.
  2. Marinate the fish:
    Place the cod fillets in a shallow bowl or plate. Coat thoroughly with the marinade.
    Cover and refrigerate for up to 12 hours (or as long as time allows — even a short marination still adds flavor).
  3. Cook the cod:
    Preheat broiler. Line a baking sheet with parchment paper.
    Gently scrape off excess marinade from the fillets (to prevent burning), then place them skin side down on the sheet.
    Broil for about 10 minutes, or until the top is beautifully charred and the fish flakes easily with a fork.
  4. Serve:
    Remove any bones before serving. Plate with rice, greens, and a sprinkle of scallions. Enjoy!
