Sunchoke Miso Oats (or any miso of your choice!)

Miso Oats
Ingredients:
- 1 cup whole-fashioned oats
- 3 cups broth
- 1 tbsp sunchoke miso (or any miso of your choice!)
- Salt, to taste
Toppings:
- Soft-boiled egg
- Sautéed spinach
- Braised mushrooms
- Drizzle of sesame oil
- Furikake
Method:
- In a pot, add oats and stir for a minute to lightly toast them.
- Add broth and bring to a light boil.
- Stir in miso and mix well to combine.
- Season with salt to taste.
- Adjust the consistency of the oats based on preference: add more broth or water for a thinner texture, or let it simmer longer for a thicker consistency.
- Top with your choice of toppings.
- Serve hot and enjoy!
