A quick, umami-packed dish featuring @sharedcultures Morel Mushroom Miso & Lentil Quinoa Shoyu.

Ingredients

  • 1 serving noodles (wheat noodles used here — any type works)
  • 1 tbsp @sharedcultures Morel Mushroom Miso
  • 1 tbsp creamy peanut butter
  • ½ tbsp @sharedcultures Lentil Quinoa Shoyu
  • 2 tsp rice vinegar
  • 1 tsp honey
  • 1 clove garlic, finely minced or grated
  • 2 tsp sesame oil
  • ¼ cup hot noodle water (plus more if needed for consistency)

To garnish:

  • Chili oil
  • Toasted sesame seeds
  • Chopped scallions

Method

  1. Cook the noodles according to package instructions. Reserve ¼ cup of the hot noodle water before draining.
  2. In a bowl, whisk together the miso, peanut butter, shoyu, rice vinegar, honey, garlic, sesame oil, and hot noodle water until smooth. Adjust the amount of water to reach your desired sauce consistency.
  3. Toss the cooked noodles in the sauce until fully coated.
  4. Top with chili oil, sesame seeds, and scallions.
  5. Serve immediately and enjoy that rich, savory kick.
