A quick, umami-packed dish featuring @sharedcultures Morel Mushroom Miso & Lentil Quinoa Shoyu.

Ingredients
- 1 serving noodles (wheat noodles used here — any type works)
- 1 tbsp @sharedcultures Morel Mushroom Miso
- 1 tbsp creamy peanut butter
- ½ tbsp @sharedcultures Lentil Quinoa Shoyu
- 2 tsp rice vinegar
- 1 tsp honey
- 1 clove garlic, finely minced or grated
- 2 tsp sesame oil
- ¼ cup hot noodle water (plus more if needed for consistency)
To garnish:
- Chili oil
- Toasted sesame seeds
- Chopped scallions
Method
- Cook the noodles according to package instructions. Reserve ¼ cup of the hot noodle water before draining.
- In a bowl, whisk together the miso, peanut butter, shoyu, rice vinegar, honey, garlic, sesame oil, and hot noodle water until smooth. Adjust the amount of water to reach your desired sauce consistency.
- Toss the cooked noodles in the sauce until fully coated.
- Top with chili oil, sesame seeds, and scallions.
- Serve immediately and enjoy that rich, savory kick.
