Miso Garlic Roasted Mushrooms

Holiday Side Dish Series: This one-pan roasted mushroom dish is meaty, savory, and bursting with umami—thanks to black garlic miso. It’s incredibly simple to make and pairs well with just about any main. Guaranteed to be a crowd pleaser!
Ingredients
- 1 lb mushrooms (button or mini bella), halved
- ¼ cup olive oil
- 2 tbsp Shared Cultures Black Garlic Miso or any miso of your choice!
- 1–2 tbsp white wine vinegar
- 3 cloves garlic, minced
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Method
- Preheat oven to 400°F (200°C).
- Make the marinade: In a bowl, whisk together olive oil, black garlic miso, white wine vinegar, minced garlic, salt, and pepper.
- Prep the mushrooms: Wipe mushrooms clean and slice in half.
- Combine: Place mushrooms in a large mixing bowl. Add the marinade and toss to coat evenly.
- Roast: Spread the mushrooms in a single layer in a heatproof pan or baking dish. Roast for 15–20 minutes, or until mushrooms are softened and golden.
- Finish & serve: Garnish with chopped parsley. Serve warm as a side dish.
