One of the easiest (and tastiest) ways to use our miso is in a noodle soup. It adds incredible depth and flavor to the broth with just a simple step. Perfect for a quick weeknight meal—save this recipe for inspiration!

Ingredients

  • 2 servings somen noodles
  • 4 cups broth (use instant dashi powder or anchovy broth tablets + water)
  • 4 tbsp @sharedcultures Wild Foraged Leek Miso
  • Splash of soy sauce
  • Splash of mirin

Topping Suggestions

  • Corn
  • Naruto (fish cakes)
  • Scallions
  • Sesame seeds
  • Yuzukoshō or yuzukararin

Method

  1. Cook the noodles: Prepare somen according to package instructions. Drain and rinse well under cold water. Set aside.
  2. Make the broth: In a pot, combine water with dashi powder or anchovy broth tablets. Stir until dissolved.
  3. Add miso and mix well to incorporate fully.
  4. Add a splash of soy sauce and mirin to taste.
  5. Assemble the soup: Place noodles in a bowl, then pour hot miso broth over them.
  6. Top with your favorite garnishes and enjoy hot!
