One of the easiest (and tastiest) ways to use our miso is in a noodle soup. It adds incredible depth and flavor to the broth with just a simple step. Perfect for a quick weeknight meal—save this recipe for inspiration!

Ingredients
- 2 servings somen noodles
- 4 cups broth (use instant dashi powder or anchovy broth tablets + water)
- 4 tbsp @sharedcultures Wild Foraged Leek Miso
- Splash of soy sauce
- Splash of mirin
Topping Suggestions
- Corn
- Naruto (fish cakes)
- Scallions
- Sesame seeds
- Yuzukoshō or yuzukararin
Method
- Cook the noodles: Prepare somen according to package instructions. Drain and rinse well under cold water. Set aside.
- Make the broth: In a pot, combine water with dashi powder or anchovy broth tablets. Stir until dissolved.
- Add miso and mix well to incorporate fully.
- Add a splash of soy sauce and mirin to taste.
- Assemble the soup: Place noodles in a bowl, then pour hot miso broth over them.
- Top with your favorite garnishes and enjoy hot!
