Yuzu Ponzu Tuna Poke Bowl

(Serves 2)
Featuring our Lentil Quinoa Shoyu (feel free to substitute for shio koji, or any of our tamaris!)

One of our favorite ways to use our shoyu is in a dressing! This yuzu ponzu vinaigrette is super versatile and works perfectly with proteins, veggies, noodles, or rice. Here, we paired it with a tuna poke bowl—light yet full of flavor. Let us know how you like to use our shoyu!

Ingredients

For the Poke Bowl:

  • ¾ lb sashimi-grade tuna, cut into bite-sized pieces
  • 2 cups short grain rice
  • 2 ¼ cups water
  • ½ shallot, finely diced
  • 1 stalk scallions (green part), finely chopped
  • 2 tbsp tobiko
  • ½ tbsp sesame seeds

For the Vinaigrette:

  • 1 tbsp @sharedcultures lentil quinoa shoyu
  • 1 tbsp yuzu juice (sub with lemon juice)
  • 1 tbsp mirin
  • 1.5 tsp sugar
  • 1.5 tbsp rice vinegar
  • ½ tsp grated ginger
  • 1 tsp sesame oil
  • Kosher salt, to taste

For the Rice Seasoning:

  • ¼ cup rice vinegar
  • 2 tsp sugar
  • ¼ tsp kosher salt

For Veggies + Garnishes:

  • Cucumber, thinly sliced
  • Radishes, thinly sliced
  • Scallions, sliced
  • Fried shallots
  • Shiso

Method

  1. Cook the rice: Wash the rice until the water runs clear. Drain and add 2 ¼ cups of water. Cook in a rice cooker.
  2. Prepare the veggies and garnishes: While the rice is cooking, prepare the veggies and garnishes. Set aside.
  3. Prepare the tuna: Place the tuna in a bowl. Add the shallots, scallions, tobiko, and sesame seeds.
  4. Make the vinaigrette: In a separate bowl, mix together the ingredients for the vinaigrette: shoyu, yuzu juice, mirin, sugar, rice vinegar, grated ginger, sesame oil, and kosher salt. Add the desired amount to the tuna mixture and mix well. Refrigerate until ready to serve.
  5. Prepare the rice seasoning: In a small bowl, mix together rice vinegar, sugar, and salt. Set aside.
  6. Finish the rice: Once the rice is cooked, transfer it to a large bowl. Add the rice seasoning and mix well. Let the rice cool.
  7. Assemble the poke bowls: Once the rice has cooled, divide it between two bowls. Top with the tuna poke mixture, veggies, and garnishes.
  8. Serve and enjoy!
