Slowly collected from our shiitake katsuobushi miso, this tamari is reminiscent of dashi and high in umami flavor. Complex and rich, its savory and smoky flavor lends an intensity to everything it touches. True tamari is made from miso fermentation, and the yield is always very small and special.
