Shio Koji Berry Compote

Shio-Koji Berry Compote

Yield: ~ 2 c 

Time: 10–15 minutes (stovetop) 

Ingredients

  • 3 c (450 g) mixed berries, fresh or frozen (strawberries hulled/quartered; blueberries; raspberries; blackberries)
  • 1 ½ Tbsp Shared Cultures Shio Koji

Directions

  1. Combine the berries and shio-koji  in a medium saucepan. Stir and rest 5 minutes to draw out juices.
  2. Cook over medium heat, stirring occasionally, until the berries release liquid and the mixture just begins to simmer, 3–5 minutes.
  3. Remove from heat. Taste and adjust seasonings. 
  4. Cool to warm for spoonable sauce or chill for a thick, spreadable texture.

Notes

  • Add a splash of lemon juice if the compote tastes flat.
  • Add a tsp of vanilla extract for depth and warmth.
  • If your berries are on the sour side, add a tsp or two of sugar or maple syrup.
