Shio Koji Berry Compote
Shio-Koji Berry Compote
Yield: ~ 2 c
Time: 10–15 minutes (stovetop)
Ingredients
- 3 c (450 g) mixed berries, fresh or frozen (strawberries hulled/quartered; blueberries; raspberries; blackberries)
- 1 ½ Tbsp Shared Cultures Shio Koji
Directions
- Combine the berries and shio-koji in a medium saucepan. Stir and rest 5 minutes to draw out juices.
- Cook over medium heat, stirring occasionally, until the berries release liquid and the mixture just begins to simmer, 3–5 minutes.
- Remove from heat. Taste and adjust seasonings.
- Cool to warm for spoonable sauce or chill for a thick, spreadable texture.
Notes
- Add a splash of lemon juice if the compote tastes flat.
- Add a tsp of vanilla extract for depth and warmth.
- If your berries are on the sour side, add a tsp or two of sugar or maple syrup.
