Dried Koji Rice
Koji is an ancient fungi that produces a flight of enzymes that are essential in the making miso, sake, amazake, shio koji, and other wonderfully delicious ferments.
Delicately dehydrated at a low temperature to preserve enzymatic vitality. Our dried koji comes in one 500-gram bag and has a shelf life of one year when unopened. Each bag is the equivalent of 1.5 pounds of fresh koji, and it's your key to crafting various ferments at home.
Rehydrate by mixing water in the amount of 40% of the dried koji rice weight. Allow the mixture to sit for 30 minutes or until soft enough to crush a grain of koji rice with your fingers.
